Flank Steak Tostadas with Cilantro Cream

Flank Steak Tostadas with Cilantro Yogurt Sauce 
serves 8
2 t. salt
2 large white onion
8 cloves garlic
spices of choice (cumin, chipotle)
Put in slow cooker, add water just to cover, cook on Low 8-9 hours. (Or cook without water about 6 hours).  Remove , let stand until just warm, shred with fork or fingers.  If not using immediately, cover and refrigerate.
Cilantro Yogurt Sauce (blend, but don’t completely puree)
2 c. 6 lbs. flank steak, trimmed of fat
thick plain yogurt
juice limes
2 cloves garlic, pressed
1 t. salt
2 c. finely chopped fresh cilantro
To serve:
16 6-in. corn tortillas
4 tomatoes, diced
4 c. shredded carrots
2-4 ripe avocados
1 c. chopped white onion or green
1 c. bell pepper, seeded and minced
6 c. shredded napa cabbage, iceberg or romaine lettuce
1 c. fresh cilantro leaves for garnish
