Baked Ziti With Sausage

Baked Ziti with Sausage
1 lb. mild Italian sausage
1 large onion, diced
2 cloves garlic
1 28-oz. can Italian plum tomatoes, chopped
1 8-oz. can tomato sauce
S&P
1 lb. ziti or other large-cut tube pasta
1 lb. whole-milk mozzarella, cubed
1/2 c. fresh grated parmesan cheese
Bring water to boil for pasta, coat the inside fothe crock with olive oil nonstick spray.  In large skillet over medium, cook sausage until browned on one side about 5 minutes, breakinginto small pieces.  Cook another 2 minutes, add onion, garlic, cook 1 minute or so until softened, add tomatoes and tomato sauce, boil.  Reduce to simmer and season.  
Cook pasta until al dente, add tomato sauce and stir in 3/4 of mozzarella. Sprinkle with remaining mozzarella and parm on top.  Cover an cook LOW 4-4 1/2 hours.
