What Does Artisan Mean?
Made by hand

What Does Naturally Leavened Mean?
Made without commercial yeast

How Do I Get Non-Commercial Yeast?
Make it yourself
Get it from a local bakery

How Do I Make It Myself?
Equal quantities rye flour and water (or pineapple juice) by weight
When it gets bubbly and smelly, feed it!
When it gets bubbly and not quite as smelly, feed it again
Repeat until it gets bubbly within 8 hours
This process will take 8-14 days


How and What Do I Feed My Starter?
Regularly
Unbleached flour and water
Warm=fast
Cool=slow
Really cold=really slow 
More starter=fast
More ‘food’=slow
Common Weights by Volume

Bread flour: 1 cup = .12-.17 kg

Whole wheat flour:  1 cup = .12-.17 kg

Rolled Oats: 1 cup = .11 kg

Water: 1 cup = .24 kg

Salt:  1 tsp = 8 grams = .008 kg

Chopped walnuts: 1 cup = .12 kg

Dried fruit:  1 cup = .19 kg

Honey: 1 cup = .34 kg

Olive oil: 1 cup = .21 kg

***Starter: 1 cup = .13-.17 kg more or less

***Starter is tricky because the volume changes continually 
This is the weight of a nicely ripe starter

What Is Baker’s Math, and Do I Really Need to Know It?

Only if you start feeling creative

Flour =  100% - always
Liquid = 60%-70% in my artisan bread recipes
Salt = 2% more or less depending on taste – YES you need it
Add-ins = 20%-30% maximum per ingredient, 40% max

Sourdough Bread
100%   Flour
  63%   Water
   2%    Salt
165%

Desired Dough Weight:  .45 kg

.45/165*100 = .27 kg flour
.45/165*63 =  .17 kg water
.45/165*2 = .005 kg salt
Total:  .44 kg ….MAGIC
So …
2 cups bread flour
½-1 cup water
½-1 cup starter
½ teaspoon salt
Makes 1 small loaf sourdough bread
What about starter:  for sourdough bread you want to ‘ferment’ at least 30% of your flour, hence the math or, just use my recipe
Cranberry Walnut Bread
100%   Flour
  63%   Water
   20%   Cranberries
    20%   Walnuts
     2%   Salt
205%

Desired Dough Weight: .45 kg

.45/205*100 = .22 kg flour
.45/205*63 = .14 kg water
.45/205*20 = .04 kg cranberries
.45/205*20 = .04 kg walnuts
.45/205*2 = .004 kg salt
Total: .444 kg – Magic
So …
1 2/3 cups bread flour
½-1 cup water
½-1 cup starter
¼ cups cranberries
1/3 cup walnuts
½ teaspoon salt
Makes 1 small loaf of bread
